Soak agar agar in warm water until tender. Cut into 2” strips. Julienne the carrots and cucumber. Slice celery, red cabbage and tofu skin into similar sizes.
Sauce: mix oyster sauce, soy sauce, syrup (melted rock candy), hot chili oil, lemon juice and salt to taste.
